The dishes were:
– Octopus cooked at 85 degrees for 4 hours, in paprika glaze, crisp artichoke, red wine jus
– Wallaby Tartare, watermelon, powered Churasso Sausage Sauce, puffed something, dried venison liver
– Handmade pasta, eggplant, spicy pistachio, cheddar
– Pink Snapper, chips, celery leek foam, macademia leaf sauce, capsicum
– Short rib wagyu beef, cookd at 52 degrees for 48hrs, black saesame bits, white saesame sauce, water cress sauce, fermented beetroot
– Rice and ricotta cake, rice infused gelato, rice puff, lemon curd, foam of earl grey, powder of earl grey
